Evanston’s Agate Press has announced the imminent release of three new books for gourmets and gourmands: James Beard Award-winning chef Sanford D’Amato’s memoir/cookbook “Good Stock: Life on a Low Simmer”; ”The New Chicago Diner Cookbook: Meat-free Recipes from America’s Veggie Diner”; and “The Sardinian Cookbook: The Cooking and Culture of a Mediterranean Island,” by Viktorija Todorovska.

Mr. D’Amato, one of the first students at the Culinary Institute of America in the 1970s, followed training with success in fine French restaurants in New York before returning to the Midwest, says the publisher. In his grandfather’s old grocery story in Milwaukee, Mr. D’Amato opened what became a nationally acclaimed restaurant; in “Good Stock” he interweaves 80 recipes with his story.

Agate says the more than 100 recipes in “The New Chicago Diner Cookbook” are accompanied by “stunning photography that will make even the most reluctant omnivores forget they are looking at vegetarian and vegan dishes.”

And Ms. Todorovska’s “The Sardinian Cookbook” “emphasiz[es] unique spices, delicious meats and seafood, cheeses, legumes, and fresh vegetables” with fascinating background on Sardinia as well as suggestions for wine pairing for her recipes.

Agate Press’s Midway imprint published in August “Even the Terrible Things Seem Beautiful to Me Now: The Best of Mary Schmich,” 160 of the Chicago Tribune’s “favorite columns, including the 10 that won her the 2012 Pulitzer Prize for Commentary,” discussing “topics … from social issues to family to reflections on loss and survival.”

And last January, the Evanston publisher brought to its list of ebooks “Duerson: Triumph, Trauma and Tragedy in the NFL,” the story of former pro football player Dave Duerson, who suffered from chronic traumatic encephalopathy. It is, Agate says, “more than just the tragic story of one man; it serves as a powerful reminder of the long-term health risks professional athletes face.”
