Texas Style Latina Entrepreneur
Five years ago, Ana Vela relocated to Evanston from San Antonio, Tex., in order to continue working for National Geographic Publishing Company. “My husband, Mario, and I did not have any children at that time and thought it would be fun to move to a new city,” she said.
Although the Velas did not have any family or friends living in Evanston or Chicago, they quickly connected with a Latino network of business professionals who welcomed them to the Midwest.
“I became the executive director at SPC Educational Solutions two years ago and was able to travel extensively to promote a parent education program. When my daughter Marianna was born in 2014, I knew that I wanted to be able to spend time with my own child. That was when I started thinking about the breakfast tacos I grew up with in Texas and how I wanted to bring them to Evanston,” said Ms. Vela.
In less than one year, Ana Vela became the president of Amanacer Breakfast Tacos. “I had many obstacles to secure a business license for a Smart Car as a Food Truck business. I was very fortunate to have the support of Nell Funk, who is the owner of Now We’re Cookin’ Food Incubator. We prepare our food in NWC’s rental kitchen. Ellyn Golden, health licensing coordinator, was also very helpful in answering all the questions we had about starting our business operation in Evanston,” said Ms. Vela.
“If you want to be a Latino entrepreneur, you can’t give up. Balancing your life is important when you have a family. I am excited about our expansion plans moving forward,” said Ms. Vela.

Aun como la familia Velas no tenían ni parientes ni amistades en Evanston o Chicago, bien pronto se pusieron en contacto con una red latina de profesionales de negocios quienes le dieron la bienvenida al Midwest.
“Hace dos años empecé como directora ejecutiva de SPC Educational Solutions y eso me dio la oportunidad de viajar extensivamente para promover un programa de educación de padres. Cuando mi hija Marianna nació, en 2014, me di cuenta que necesitaba tiempo para poder estar con mi hija. Fue entonces que empecé a acordarme de los tacos que comíamos de desayuno en Texas cuando éramos niños y cuanto quería traerlos aquí a Evanston.”
En menos de un año Ana Vela se convirtió en la presidenta de Amanecer Breakfast Tacos. “Tuve que sobrepasar muchos obstáculos para conseguir una licencia para un Smart Car, o negocio de cocina móvil (Food Truck). Tuve la fortuna de tener el respaldo de Nell Funk, que es la dueña de NWC (Now We’re Cookin) que es un centro “incubador” de negocios de comida. Preparamos la comida en la cocina que alquilamos de NWC. Ellyn Golden, la coordinadora de licencias de salud, fue también una gran ayuda contestando todas nuestras preguntas acerca de cómo iniciar nuestro negocio en Evanston.
“Si usted quiere ser un empresario latino no puede descorazonarse, darse por vencido. También es importante buscar el balance cuando uno tiene familia. Estoy muy entusiasmada con los planes de expansión que tenemos para el futuro,”
