Mauricio Coss opened Supreme Burrito at 843 Dodge St. in May 2012. Since then the restaurant has become a staple in Evanston, most notably among Evanston Township High School students.
Mauricio is a native of Michoacán, Mexico, and previously owned the Famous Taco Burrito restaurant at Irving Park Road and California Avenue near Horner Park in Chicago. “I have the best guys in back,” Mauricio brags of his longtime staff, which now includes his son Mauricio, Jr. Both Mauricio Sr. and Mauricio Jr. are on a first-name basis with many of their clients, especially ETHS students and alums.
In this edition of “People You Should Know,” Mauricio Coss is interviewed by Michael Axelrood, an ETHS alumnus and former Evanston Wildkits wide receiver and two-time football captain. Michael is a regular customer at Supreme Burrito, where he highly recommends the lengua (cow tongue) tacos. He currently attends Princeton University where he majors in economics and also plays football.
