  AT 9 A.M. ON TUESDAY, JUNE 11 FOLLOW THE AROMA OF BAKER BREAD TO Hewn - Hand Forged Artisan Bread at 810 Dempster Street in Evanston

  EVANSTON, IL &ndash The general public and media are invited to join 4th Ward Alderman Don Wilson, members of The Evanston Chamber of Commerce, Chamber Board Directors, Ambassadors and staff to celebrate the Ribbon Cutting of Hewn - Hand Forged Artisan Bread on Tuesday, June 11from 9:00 a.m. &ndash 10 a.m.  

  Hewn, a new artisanal bakery opening in June in Evanston, is already generating buzz.  Co-owned by Ellen King and Julie Matthei, Hewn&rsquo s mission is to serve Evanston and the surrounding communities the best grain and plant based foods in an authentic environment.   Everything at Hewn is made in-house, from scratch daily using a giant hearth stone oven.   They source local and seasonal ingredients from small, local farmers when their flavors are at their peak &ndash most recently from Evanston&rsquo s own Farmers Market.    All of the breads are hand-mixed, hand-shaped and naturally fermented without commercial yeast.   The seasonal sandwiches, salads and grains adhere to a philosophy of serving food that promotes a healthy body.

  The celebration will also include staff members from the City of Evanston, members of the Chicago Dempster Merchants Association and members of The Chicago Area Gay & Lesbian Chamber of Commerce.  Stop by for complimentary beverages and food offerings.

  Hewn&rsquo s space at 810 Dempster was created with locally salvaged and repurposed materials, which conveys the rustic and simple nature of bread making.  The owners believe that the physical environment should complement the patient, natural process of hand-hewn bread.   Hewn is scheduled to open its doors Tuesday, June 4th.


&ldquo The reason that the name is Hewn is because Hewn means to cut or shape by chopping by hand.&rdquo says Julie Matthei.  Ellen King commented, &ldquo I just fell in love with the whole process of baking bread while working at a cheese farm that had a wood-fired oven.&rdquo

  &ldquo I anticipate long lines of bread lovers stopping in once the smell of baked bread fills the air in this Chicago Dempster Business District.  I love their back story of how Ellen and Julie met through their kids at the nearby Chiaravalle Montessori School and chose to open their business close by in Evanston.&rdquo noted Elaine Kemna-Irish, Evanston Chamber Executive Director.
